It is not the actual camera Picture Styles, but a set of Adobe Created profiles to emulate them. You can create your own using the DNG Profile editor on Adobe Labs.

As Richard says, it's possible to create profiles and this is necessary if you use a custom Picture Style rather than one of Canon's presets.Lightroom 2 also offers this functionality. If only Aperture did!
